Resep Kue (Susu Bubuk Vatpro)

ROTI TAWAR

Bahan A
Cakra 500g
Gula pasir 50g
Yeast 10g
Air 150cc

Bahan B
Cakra 500g
Gula pasir 50g
Yeast 10g
Susu Vatpro 100g
Air 150cc
Butter Euromix 100g
Garam 15g
Ansys 2-5g

Cara Membuat :
1. Siapkan mixer yang sudah dikeringkan dan dibersihkan. Aduk bahan A hingga rata lalu istirahatkan selama 60 menit dalam wadah tertutup. Jadikan sebagai bahan biang, sisihkan (sampai mengembang).
2. Campur bahan A dengan bahan B hingga kalis lalu istriahatkan selama 10 menit.
3. Potong adonan sesuai dengan ukuran Loyang yang sudah dipersiapkan
4. Gilas adonan dengan rol lalu masukan ke dalam box
Istirahatkan adonan selama 60 menit (3/4 box)
5. Oven dalam suhu 200ºC selama 30 menit


CROISANT
Bahan :
Tepung cakra 1kg
Gula pasir 100g
Susu bubuk Vatpro 60g
Garam 20g
Yeast 25g
Telor campur 2btr
Air es 500ml
Butter Euromix 80g
Fat croissant 1lbr/1kg

Cara membuat:
1. Siapkan mixer yang sudah di bersihkan .
2. Masukan tepung cakra, gula, susu vatpro, garam, yeast, dan telor.aduk pelan.
3. Masukan air es sedikit demi sedikit, kemudian masukan Butter Euromix.
4. Aduk adonan hingga 80% kalis.
5. Angkat adonan dan diamkan di meja selama 10 menit.
5. Rol adonan kemudian masukan fat croissant.
7. Kemudian rol lagi adonan secara single,masukan ke chiller selama 30 menit.
8. Kemudian rol lagi adonan secara double,masukan ke chiller selama 30 menit.
9. Kemudian rol lagi adonan secara double,lalu potong adonan.
10. Bentuk adonan sesuai selera masing-masing.
11. Diamkan adonan selama 60 menit.
12. Oven adonan dalam suhu 150ºC selama 20 menit.
13. Croisant siap dihidangkan.
